    The underrated move on day one is the Wine Cellar before the Ballroom. Most briefs default to the Ballroom for opening night because the room reads as flagship. Opening in the Cellar with tapas, Portuguese and Spanish wine, and 40 seated in greenish-grey intimacy allows the cohort to calibrate to the estate's scale gradually. The Ballroom then earns its scale on day two, not day one.
